Zesty Lime Chicken Taco Salad

Ingredients

- (2) chicken breasts
- (1) lime (juiced)
- (1 tbsp) olive oil
- (1 tsp) chili powder
- (1 tsp) cumin
- (1/2 tsp) garlic powder
- (1/4 tsp) salt
- (1/4 tsp) black pepper
- (1) head romaine lettuce (chopped)
- (1) bell pepper (diced)
- (1) avocado (sliced)
- (1/2 cups) cherry tomatoes (halved)
- (1/4 cups) red onion (diced)
- (1 cup) corn (canned or fresh)
- (1 cup) black beans (canned, drained and rinsed)
- (1/2 cups) shredded cheese (optional)
- (1 cup) tortilla strips (for topping)
- (1/4 cups) fresh cilantro (chopped)

In a bowl, combine the (1) lime (juiced), (1 tbsp) olive oil, (1 tsp) chili powder, (1 tsp) cumin, (1/2 tsp) garlic powder, (1/4 tsp) salt, and (1/4 tsp) black pepper to make a marinade.

Add the (2) chicken breasts to the marinade and coat well. Let it marinate for at least 30 minutes in the refrigerator.

After marinating, heat a grill pan over medium-high heat and add the chicken breasts. Grill for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75 °C).

Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.

In a large bowl, add the (1) head of chopped romaine lettuce, (1) diced bell pepper, (1) sliced avocado, (1/2 cup) halved cherry tomatoes, (1/4 cup) diced red onion, (1 cup) corn, and (1 cup) black beans.

Toss the salad ingredients together until well mixed, then top with the grilled chicken strips.

Sprinkle (1/2 cup) shredded cheese (if using), (1 cup) tortilla strips, and (1/4 cup) chopped fresh cilantro over the top.
