Ingredients
Yields 4 servings
- (1 lb) large shrimp, peeled and deveined
- (2 tbsp) olive oil
- (4 cloves) garlic, minced
- (1) lemon, zested and juiced
- (1/2 tsp) red pepper flakes
- (1/2 tsp) black pepper
- (1 tsp) salt
- (1 cup) jasmine rice
- (2 cups) vegetable broth
- (1) bell pepper, sliced
- (1) zucchini, sliced
- (1/2 cups) cherry tomatoes, halved
- (1/4 cups) fresh parsley, chopped

In a medium saucepan, combine the (1 cup) jasmine rice and (2 cups) vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the broth is absorbed.

While the rice is cooking, heat (2 tbsp) olive oil in a large skillet over medium heat. Add the (4 cloves) minced garlic and sauté for about 1 minute until fragrant.

Add the (1 lb) shrimp to the skillet. Season with (1/2 tsp) red pepper flakes, (1/2 tsp) black pepper, and (1 tsp) salt. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.

Stir in the zest and juice of (1) lemon, then add the (1) sliced bell pepper, (1) sliced zucchini, and (1/2 cup) halved cherry tomatoes to the shrimp. Cook for an additional 5 minutes until the vegetables are tender.

Fluff the cooked rice with a fork, then serve it in bowls topped with the lemon garlic shrimp and vegetables. Garnish with (1/4 cup) chopped fresh parsley.
