Zesty Citrus Grilled Chicken Salad

- (1 tablespoon) olive oil
- (1/2 tsp) salt
- (1/2 tsp) black pepper
- (1) grapefruit, segmented
- (1) orange, segmented
- (4 cups) mixed salad greens
- (1/4 cups) red onion, thinly sliced
- (1/4 cups) feta cheese, crumbled
- (1/4 cups) walnuts, chopped
- (1 tablespoon) honey
- (2 tbsp) apple cider vinegar

Preheat your grill to medium-high heat.

Brush the (2) chicken breasts with (1) tablespoon olive oil and season with (1/2 tsp) salt and (1/2 tsp) black pepper.

Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74 °C).

Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing it thinly.

While the chicken rests, prepare the salad: In a large bowl, combine (4 cups) mixed salad greens, (1/4 cup) red onion, (1) grapefruit segmented, (1) orange segmented, (1/4 cup) feta cheese, and (1/4 cup) walnuts.
