- (2 cups) cooked rice
- (1 lb) chicken breast, sliced
- (1 tablespoon) olive oil
- (1 teaspoon) chili powder
- (1 teaspoon) cumin
- (1 teaspoon) paprika
- (1/2 teaspoons) garlic powder
- (1/2 teaspoons) onion powder
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1) bell pepper, sliced
- (1) onion, sliced
- (1 cup) corn, frozen or canned
- (1/2 cups) black beans, drained and rinsed
- (1) avocado, diced
- (1/4 cups) fresh cilantro, chopped
- (1) lime, juiced

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add 1 lb of sliced chicken breast to the skillet and season with 1 teaspoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for about 5-7 minutes until the chicken is cooked through.

Add 1 sliced bell pepper and 1 sliced onion to the skillet with the chicken. Sauté for another 5 minutes until the vegetables are tender.

Stir in 1 cup of corn and 1/2 cup of black beans. Cook for an additional 3-4 minutes until heated through.

Divide the cooked rice into 4 bowls. Top each bowl with the chicken and vegetable mixture.

Garnish each bowl with 1 diced avocado, 1/4 cup of chopped fresh cilantro, and a squeeze of juice from 1 lime.
