White Chicken Chili

Ingredients

- (1 lb) boneless, skinless chicken breasts
- (1) medium onion, diced
- (2 cloves) garlic, minced
- (1 tbsp) olive oil
- (2 cans) (15 oz each) white beans, drained and rinsed
- (1 can) (4 oz) diced green chilies
- (1 cup) chicken broth
- (1 tsp) ground cumin
- (1 tsp) chili powder
- (1/2 tsp) paprika
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (1/2 cups) sour cream
- (1/4 cups) chopped fresh cilantro (for garnish)

Heat 1 tbsp olive oil in a large pot over medium heat.

Add 1 medium onion, diced, and sauté for 3-4 minutes until softened.

Stir in 2 cloves garlic, minced, and cook for an additional 1 minute until fragrant.

Add 1 lb boneless, skinless chicken breasts to the pot and cook for about 5 minutes on each side until browned.

Pour in 1 cup chicken broth and bring to a simmer. Cover and cook for 20 minutes or until chicken is cooked through.

Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

Stir in 2 cans (15 oz each) white beans, drained and rinsed, 1 can (4 oz) diced green chilies, 1 tsp ground cumin, 1 tsp chili powder, 1/2 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper.

Simmer the chili for an additional 10 minutes to heat through and allow flavors to meld.
