Waffles

Ingredients
Yields 8 waffles
- (2 cups) all-purpose flour
- (2 tablespoons) sugar
- (1 tablespoon) baking powder
- (1/2 teaspoons) salt
- (2) large eggs
- (1 3/4 cups) milk
- (1/2 cups) vegetable oil
- (1 teaspoon) vanilla extract

In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.

In another bowl, beat 2 large eggs and then add 1 3/4 cups milk, 1/2 cup vegetable oil, and 1 teaspoon vanilla extract. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

Preheat your waffle iron according to the manufacturer's instructions.

Once preheated, lightly grease the waffle iron with cooking spray or a little oil.

Pour an appropriate amount of batter onto the center of the waffle iron (about 1 cup, depending on your waffle iron size) and close the lid.

Cook according to your waffle iron's instructions, usually about 5 minutes, or until the waffles are golden brown and crispy.
