Veggie and Hummus Wraps

Ingredients
Yields 4 servings
- (4) whole wheat tortillas
- (1 cup) hummus
- (1) red bell pepper, sliced
- (1) cucumber, sliced
- (1) carrot, grated
- (1) avocado, sliced
- (1/4 cups) fresh spinach leaves
- (1/4 cups) feta cheese, crumbled (optional)
- (2 tbsp) olive oil (for drizzling)
- (1/2 tsp) black pepper
Instructions

Lay out the (4) whole wheat tortillas on a clean surface.

Spread (1 cup) hummus evenly over each tortilla, leaving a small border around the edges.

Distribute the (1) red bell pepper slices, (1) cucumber slices, (1) grated carrot, and (1) avocado slices over the hummus on each tortilla.

Add (1/4 cup) fresh spinach leaves on top of the veggies, and sprinkle with (1/4 cup) feta cheese if using.

Drizzle (2 tbsp) olive oil over the fillings and sprinkle with (1/2 tsp) black pepper to taste.

Carefully roll each tortilla up tightly, folding in the sides as you go to secure the filling inside.
