Ingredients
Yields 4 servings
- (8 oz) penne pasta
- (1 tbsp) olive oil
- (1) onion, chopped
- (2 cloves) garlic, minced
- (1) bell pepper, diced
- (1) zucchini, sliced
- (1) carrot, julienned
- (1 cup) cherry tomatoes, halved
- (1 tsp) dried oregano
- (1 tsp) salt
- (1/2 tsp) black pepper
- (1/4 tsp) red pepper flakes
- (1/4 cups) fresh basil, chopped
- (1/4 cups) grated Parmesan cheese

Cook the (8 oz) penne pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat (1 tbsp) olive oil over medium heat. Add the (1) chopped onion and sauté for about 3 minutes until softened.

Stir in the (2 cloves) minced garlic and cook for an additional minute until fragrant.

Add the (1) diced bell pepper, (1) sliced zucchini, and (1) julienned carrot to the skillet. Cook for about 5-7 minutes until the vegetables are tender.

Add the (1 cup) halved cherry tomatoes, (1 tsp) dried oregano, (1 tsp) salt, (1/2 tsp) black pepper, and (1/4 tsp) red pepper flakes. Stir and cook for another 3-4 minutes until the tomatoes start to soften.

Mix in the cooked penne pasta and toss everything together until well combined. Cook for an additional 2 minutes to heat through.

Remove from heat and fold in (1/4 cup) chopped fresh basil and (1/4 cup) grated Parmesan cheese. Serve hot.
