Ingredients
Yields 4 servings
- (1 cup) brewed coffee, cooled
- (2 tablespoons) coffee liqueur (optional)
- (2) large eggs, separated
- (1/2 cups) granulated sugar
- (1 cup) mascarpone cheese
- (1 cup) heavy cream
- (24) ladyfinger cookies
- (2 tablespoons) unsweetened cocoa powder
Instructions
- 1
In a medium bowl, combine 1 cup brewed coffee and 2 tablespoons coffee liqueur (if using). Set aside to cool completely.
- 2
In a separate bowl, beat the egg yolks and 1/2 cup granulated sugar together until pale and creamy, about 3-4 minutes.
- 3
Add 1 cup mascarpone cheese to the egg mixture and mix until smooth and well combined.
- 4
In another bowl, whip 1 cup heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
- 5
In a shallow dish, quickly dip each ladyfinger into the cooled coffee mixture, ensuring they are soaked but not soggy.
- 6
Layer half of the soaked ladyfingers in the bottom of a 9x9 inch dish.
- 7
Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
- 8
Repeat the process with the remaining ladyfingers and mascarpone mixture, creating a second layer.
- 9
Cover and refrigerate for at least 4 hours, or overnight for best results.
- 10
Before serving, dust the top with 2 tablespoons unsweetened cocoa powder.
