- (1) cucumber, thinly sliced
- (1) bell pepper, thinly sliced
- (1) medium red onion, thinly sliced
- (1 cup) cherry tomatoes, halved
- (1 cup) spinach leaves
- (1/2 cups) feta cheese, crumbled
- (1/4 cups) tahini
- (2 tbsp) lemon juice
- (1 tbsp) olive oil
- (1 clove) garlic, minced
- (1/4 tsp) salt
- (1/4 tsp) black pepper

In a small bowl, combine (1 /4) cup tahini, (2 tbsp) lemon juice, (1 tbsp) olive oil, (1 clove) garlic, minced, (1/4 tsp) salt, and (1/4 tsp) black pepper. Whisk until smooth and set aside.

Lay out (4) whole wheat tortillas on a clean surface or plate.

Spread an even layer of the tahini sauce over each tortilla, reserving some for drizzling later.

Top each tortilla with (1) cucumber, thinly sliced, (1) bell pepper, thinly sliced, (1) medium red onion, thinly sliced, (1) cup cherry tomatoes, halved, and (1 cup) spinach leaves, dividing the ingredients evenly among the tortillas.

Sprinkle (1 /2) cup feta cheese, crumbled, on top of the vegetables in each wrap.

Roll each tortilla tightly, folding in the sides as you go to form a wrap. Repeat with all tortillas.
