  • (1 lb) ground beef
  • (1 packet) taco seasoning
  • (1 cup) cherry tomatoes, halved
  • (1 cup) canned black beans, rinsed and drained
  • (1 cup) corn kernels, fresh or frozen
  • (1) head romaine lettuce, chopped
  • (1 cup) shredded cheddar cheese
  • (1 cup) salsa
  • (1 cup) tortilla chips, crushed
  • (1/4 cups) sour cream
  • (1/4 cups) fresh cilantro, chopped

Instructions

    In a skillet over medium heat, cook 1 lb ground beef until browned, about 5-7 minutes.

    Drain excess fat, then add 1 packet taco seasoning and follow package instructions to season the beef.

    In a large bowl, combine 1 head romaine lettuce, 1 cup cherry tomatoes, 1 cup black beans, and 1 cup corn kernels.

    Add the seasoned beef to the bowl and mix well.

    Top the salad with 1 cup shredded cheddar cheese, 1 cup salsa, and 1/4 cup fresh cilantro.
