Ingredients
Yields 4 servings
- (4) chicken breasts
- (1/4 cups) honey
- (1/4 cups) soy sauce
- (3 cloves) garlic, minced
- (1 tablespoon) sriracha sauce
- (2 tablespoons) olive oil
- (1) bell pepper, sliced
- (1) zucchini, sliced
- (1 cup) broccoli florets
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1 tablespoon) sesame seeds (optional)
Instructions
- 1
In a small bowl, mix together 1/4 cup honey, 1/4 cup soy sauce, 3 cloves minced garlic, and 1 tablespoon sriracha sauce to create the marinade.
- 2
Place the 4 chicken breasts in a large resealable bag or bowl and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- 3
Preheat your oven to 400°F (200 °C).
- 4
In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the marinated chicken breasts (reserve the marinade) and sear for about 3-4 minutes on each side until golden brown.
- 5
Remove the chicken from the skillet and set aside. In the same skillet, add 1 sliced bell pepper, 1 sliced zucchini, and 1 cup broccoli florets. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Sauté for about 5-7 minutes until the vegetables are tender-crisp.
- 6
Return the chicken to the skillet with the vegetables and pour the reserved marinade over the top.
- 7
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C).
- 8
Remove from the oven and let rest for a few minutes. If desired, sprinkle with 1 tablespoon sesame seeds before serving.
