Sweet and Spicy Glazed Meatballs with Rice

Ingredients

Servings4

Yields 4 servings

  • (1 lb) ground beef
  • (1/2 cups) breadcrumbs
  • (1/4 cups) grated Parmesan cheese
  • (1 egg)
  • (2 cloves) garlic, minced
  • (1 tbsp) soy sauce
  • (1 tbsp) Worcestershire sauce
  • (1/4 cups) honey
  • (2 tbsp) sriracha sauce
  • (2 tbsp) ketchup
  • (1 tsp) ginger, minced
  • (1/4 cups) green onions, chopped
  • (2 cups) white rice
  • (4 cups) water
  • (1 tbsp) vegetable oil
  • (1 tsp) black pepper
  • (1/2 tsp) salt

Instructions

  1. 1

In a large bowl, combine (1 lb) ground beef, (1/2 cup) breadcrumbs, (1/4 cup) grated Parmesan cheese, (1) egg, (2 cloves) minced garlic, (1 tbsp) soy sauce, (1 tbsp) Worcestershire sauce, (1/2 tsp) salt, and (1 tsp) black pepper. Mix until well combined.

  2. 2

Shape the mixture into meatballs, about 1 inch in diameter.

  3. 3

In a large skillet, heat (1 tbsp) vegetable oil over medium heat. Add the meatballs and cook for about 10-12 minutes, turning occasionally until browned and cooked through.

  4. 4

While the meatballs are cooking, in a small saucepan, combine (1/4 cup) honey, (2 tbsp) sriracha sauce, (2 tbsp) ketchup, and (1 tsp) minced ginger. Bring to a simmer over medium heat, stirring occasionally.

  5. 5

Once the meatballs are cooked, pour the glaze over the meatballs in the skillet. Toss to coat and cook for an additional 5 minutes, allowing the glaze to thicken slightly.

  6. 6

In a separate pot, combine (2 cups) white rice and (4 cups) water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.

  7. 7

Serve the meatballs over the fluffy rice, garnished with (1/4 cup) chopped green onions.
