Sushi Rice

Ingredients
Yields 4 servings
- (2 cups) sushi rice
- (2 cups) water
- (1/4 cups) rice vinegar
- (2 tbsp) sugar
- (1 tsp) salt

Rinse the (2 cups) sushi rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, combine the rinsed rice and (2 cups) water. Bring to a boil over medium heat, cover, and reduce the heat to low. Cook for about 18-20 minutes, or until the water is absorbed and rice is tender.

While the rice is cooking, prepare the sushi rice seasoning by combining (1/4 cup) rice vinegar, (2 tbsp) sugar, and (1 tsp) salt in a small bowl. Stir until the sugar and salt are dissolved.

Once the rice is done cooking, remove it from heat and let it sit, covered, for an additional 10 minutes.

Transfer the cooked rice to a large bowl. Pour the vinegar mixture over the rice while gently folding the rice with a wooden spatula to combine. Be careful not to mash the grains.

Allow the sushi rice to cool to room temperature before using for sushi rolls.
