Stuffed Peppers

Ingredients
Yields 4 servings
- (4) large bell peppers
- (1 pound) ground beef
- (1 cup) cooked rice
- (1 cup) diced tomatoes
- (1) small onion, diced
- (2 cloves) garlic, minced
- (1 teaspoon) Italian seasoning
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1 cup) shredded cheese (cheddar or mozzarella)

Preheat the oven to 375°F (190 °C).

Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 small onion, diced, and sauté until translucent, about 3-4 minutes.

Add 2 cloves of minced garlic and 1 pound of ground beef to the skillet. Cook until the beef is browned, breaking it up with a spoon, about 5-7 minutes.

Stir in 1 cup of cooked rice, 1 cup of diced tomatoes, 1 teaspoon of Italian seasoning, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix well and cook for another 2-3 minutes to combine flavors.

Remove the skillet from heat and stir in 1/2 cup of shredded cheese until melted and combined.

Stuff each bell pepper with the beef and rice mixture, packing it in gently. Top each pepper with the remaining cheese.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly.
