Strawberry Coconut Milk Popsicles

- (2 cups) fresh strawberries, hulled and sliced
- (1/2 cups) coconut milk
- (1/4 cups) honey or maple syrup
- (1 tablespoon) lemon juice
- (1/2 teaspoons) vanilla extract
- (1/4 cups) shredded coconut (optional)

In a blender, combine 2 cups fresh strawberries, hulled and sliced, 1/2 cup coconut milk, 1/4 cup honey or maple syrup, 1 tablespoon lemon juice, and 1/2 teaspoon vanilla extract.

Blend the mixture until smooth and well combined, about 30 seconds.

Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.

If desired, stir in 1/4 cup shredded coconut for added texture.

Pour the strawberry mixture into popsicle molds, leaving a little space at the top for expansion.

Insert popsicle sticks into the molds and place them in the freezer.
