Strawberry Coconut Chia Popsicles

Ingredients
Yields 4 servings
- (2 cups) fresh strawberries, hulled and sliced
- (1/2 cups) coconut milk
- (1/4 cups) honey or maple syrup
- (1/4 cups) chia seeds
- (1 teaspoon) vanilla extract
- (1/4 cups) water
Instructions

In a blender, combine 2 cups fresh strawberries, 1/4 cup honey, and 1/4 cup water. Blend until smooth.

In a mixing bowl, combine 1/2 cup coconut milk, 1/4 cup chia seeds, and 1 teaspoon vanilla extract. Stir well and let sit for 10 minutes to allow chia seeds to absorb some liquid.

Layer the strawberry mixture and the coconut chia mixture in popsicle molds. Start with a layer of strawberry mixture, then add a layer of coconut chia mixture, and repeat until molds are full.

Insert sticks into the molds and freeze for at least 4 hours or until solid.

To remove the popsicles, run warm water over the outside of the molds for a few seconds to loosen them.
