  • (4 slices) whole grain bread
  • (1 cup) hummus
  • (1) medium cucumber, thinly sliced
  • (1 cup) cherry tomatoes, halved
  • (1/2 cups) radishes, thinly sliced
  • (1/4 cups) fresh parsley, chopped
  • (1 tablespoon) olive oil
  • (1 teaspoon) lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

    Toast 4 slices of whole grain bread until golden brown.

    In a small bowl, mix 1 tablespoon olive oil with 1 teaspoon lemon juice, and season with salt and pepper to taste. Add Salt, to taste.

    Spread 1 cup of hummus evenly over each slice of toasted bread.

    Top the hummus with 1 medium cucumber (thinly sliced), 1 cup cherry tomatoes (halved), and 1/2 cup radishes (thinly sliced).
