Spring Vegetable Stir-Fry with Sesame Sauce

Ingredients

- (1 cup) snap peas
- (1 cup) bell pepper, sliced
- (1 cup) carrots, julienned
- (1 cup) zucchini, sliced
- (1 tablespoon) vegetable oil
- (2 cloves) garlic, minced
- (1 tablespoon) fresh ginger, minced
- (1/4 cups) soy sauce
- (2 tablespoons) sesame oil
- (1 tablespoon) honey
- (1 tablespoon) rice vinegar
- (1 tablespoon) sesame seeds
- (2) green onions, sliced

In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.

Add 2 cloves of minced garlic and 1 tablespoon of minced fresh ginger, sauté for 1 minute until fragrant.

Add 2 cups of broccoli florets, 1 cup of snap peas, 1 cup of sliced bell pepper, 1 cup of julienned carrots, and 1 cup of sliced zucchini to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of honey, and 1 tablespoon of rice vinegar to make the sesame sauce.

Pour the sesame sauce over the stir-fried vegetables and toss to coat evenly. Cook for an additional 2 minutes to heat through.
