Spring Vegetable and Feta Breakfast Scramble

Ingredients
Yields 4 servings
- (1 tablespoon) olive oil
- (1) small onion, diced
- (1) red bell pepper, diced
- (1) zucchini, diced
- (1 cup) fresh spinach, chopped
- (4) large eggs
- (1/4 cups) milk
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1/2 cups) feta cheese, crumbled
- (2 tablespoons) fresh parsley, chopped

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add 1 small diced onion and sauté for 3-4 minutes until translucent.

Stir in 1 diced red bell pepper and 1 diced zucchini, cooking for another 5 minutes until softened. Add 2/4 teaspoon salt and 1/4 teaspoon black pepper.

Add 1 cup of chopped fresh spinach and cook until wilted, about 2 minutes.

In a bowl, whisk together 4 large eggs, 1/4 cup of milk, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

Pour the egg mixture into the skillet with the vegetables, stirring gently to combine.

Cook for 5-7 minutes, stirring occasionally, until the eggs are fully cooked but still soft.
