Spring Strawberry Oatmeal Pancakes

Ingredients
Yields 8 pancakes
- (1 cup) rolled oats
- (1 cup) milk
- (1) large egg
- (1 tablespoon) honey
- (1 teaspoon) vanilla extract
- (1 cup) all-purpose flour
- (2 teaspoons) baking powder
- (1/2 teaspoons) salt
- (1 cup) fresh strawberries, chopped
- (2 tablespoons) butter, for cooking

In a bowl, combine 1 cup rolled oats and 1 cup milk. Let it sit for 15 minutes to soften the oats.

In another bowl, whisk together 1 large egg, 1 tablespoon honey, and 1 teaspoon vanilla extract until well combined.

Add the soaked oats mixture to the egg mixture and stir until combined.

In a separate bowl, mix 1 cup all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Gently fold in 1 cup chopped fresh strawberries.

Heat a non-stick skillet over medium heat and melt 2 tablespoons butter.

Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
