Spring Strawberry Mojito Pitcher with mint and strawberries

  • (1 cup) fresh strawberries, hulled and sliced
  • (1/2 cups) fresh mint leaves, plus extra for garnish
  • (1/2 cups) granulated sugar
  • (1 cup) fresh lime juice (about 6 limes)
  • (2 cups) white rum
  • (4 cups) soda water
  • Ice cubes

Instructions

    In a large pitcher, combine 1 cup of sliced strawberries and 1/2 cup of granulated sugar. Muddle the strawberries and sugar together using a muddler or the back of a spoon until the strawberries release their juices and the sugar dissolves.

    Add 1/2 cup of fresh mint leaves to the pitcher. Gently muddle the mint leaves with the strawberry mixture to release the mint's aroma and flavor.

    Pour in 1 cup of fresh lime juice and 2 cups of white rum. Stir the mixture well to combine all the ingredients.
