Ingredients

Servings4

Yields 4 servings

  • (1 cup) almond milk
  • (1/4 cups) chia seeds
  • (2 tablespoons) maple syrup
  • (1 teaspoon) vanilla extract
  • (1 cup) fresh strawberries, hulled and sliced
  • (1/4 cups) fresh mint leaves, chopped
  • (1/4 teaspoons) salt

Instructions

  1. 1

In a mixing bowl, combine 1 cup almond milk, 1/4 cup chia seeds, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Mix well until the chia seeds are evenly distributed.

  2. 2

Cover the bowl and refrigerate for at least 60 minutes, or until the mixture thickens to a pudding-like consistency.

  3. 3

Once thickened, stir the pudding to break up any clumps of chia seeds.

  4. 4

In serving glasses, layer the chia pudding with sliced fresh strawberries and chopped mint leaves, creating at least two layers of each ingredient.

  5. 5

Top each glass with additional strawberries and mint for garnish.

  6. 6

Serve immediately or chill for an additional 30 minutes for a cooler treat.
