  • (2 cups) fresh peas (shelled)
  • (1/4 cups) fresh mint leaves (chopped)
  • (1/2 cups) feta cheese (crumbled)
  • (1/4 cups) red onion (finely chopped)

  • (2 tablespoons) lemon juice
  • (1 teaspoon) honey
  • Salt to taste

Instructions

    In a medium pot, bring water to a boil and add 2 cups fresh peas. Blanch for 2-3 minutes until bright green, then drain and cool in ice water.
