Spring Pea and Mint Breakfast Smoothie

Ingredients
Yields 4 8oz glasses
- (2 cups) fresh or frozen peas
- (1 cup) plain yogurt
- (1) banana
- (1/2 cups) fresh mint leaves
- (1 tablespoon) honey
- (1 cup) almond milk
- (1/2 teaspoons) vanilla extract
- (1/4 teaspoons) salt

If using fresh peas, blanch them in boiling water for 2 minutes, then cool in ice water. If using frozen peas, thaw them completely.

In a blender, combine 2 cups of peas, 1 cup of plain yogurt, 1 banana, 1/2 cup of fresh mint leaves, 1 tablespoon of honey, 1 cup of almond milk, 1/2 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Add 1/4 teaspoon salt.

Blend on high speed until smooth and creamy, about 1-2 minutes.

Taste and adjust sweetness if desired by adding more honey.
