- (1/4 cups) fresh lemon juice

- (2 cloves) garlic, minced
- (1 teaspoon) salt
- (1/2 teaspoons) black pepper
- (1) bell pepper, cut into 1-inch pieces
- (1) zucchini, sliced into 2/4-inch rounds
- (1) red onion, cut into wedges
- (1 cup) cherry tomatoes

In a bowl, combine 1/4 cup olive oil, 1/4 cup fresh lemon juice, 2 tablespoons fresh parsley, 2 tablespoons fresh basil, 1 tablespoon fresh thyme, 2 cloves minced garlic, 1 teaspoon salt, and 1/2 teaspoon black pepper to create the marinade. Add 2 tablespoons fresh basil, chopped, 1 tablespoon fresh thyme, chopped, and 2/4 teaspoon black pepper.

Add the 1 lb chicken breast cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to marinate.

While the chicken is marinating, prepare the vegetables. In a separate bowl, toss together 1 bell pepper, 1 zucchini, 1 red onion, and 1 cup cherry tomatoes with a drizzle of olive oil and a pinch of salt and pepper.

Once marinated, thread the chicken onto skewers, alternating with the prepared vegetables.
