Spring Citrus and Avocado Grain Bowl with Quinoa and Mixed Greens

  • (1 cup) quinoa
  • (2 cups) water
  • (4 cups) mixed greens (such as arugula, spinach, and kale)
  • (2) medium avocados, diced
  • (1) orange, segmented
  • (1) grapefruit, segmented
  • (1/4 cups) red onion, thinly sliced
  • (1/4 cups) feta cheese, crumbled
  • (1/4 cups) olive oil
  • (2 tablespoons) lemon juice
  • (1 teaspoon) honey
  • Salt to taste
  • Pepper to taste

Instructions

    Rinse 1 cup quinoa under cold water in a fine mesh strainer.

    In a medium saucepan, combine the rinsed quinoa and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let sit covered for 5 minutes. Add Salt to taste.

    Fluff the quinoa with a fork and allow it to cool to room temperature.

    In a large bowl, combine 4 cups mixed greens, 2 medium avocados (diced), 1 orange (segmented), 1 grapefruit (segmented), and 1/4 cup red onion (thinly sliced).

    In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 1 teaspoon honey, and salt and pepper to taste to create the dressing.

    Add the cooled quinoa to the large bowl with the mixed greens and citrus. Pour the dressing over the top and toss gently to combine.

    Top the grain bowl with 1/4 cup crumbled feta cheese before serving.
