In a large bowl, combine 4 cups of pitted fresh cherries, 1/2 cup of granulated sugar, 1 tablespoon of cornstarch, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice. Toss until the cherries are well coated. Add 1/4 teaspoon salt.
