Ingredients

Servings4

Yields 4 servings

  • (2 cups) plain yogurt
  • (1 cup) strawberries, hulled and sliced
  • (1 cup) blueberries
  • (1/4 cups) honey
  • (1 teaspoon) vanilla extract
  • (1 tablespoon) lemon juice

Instructions

  1. 1

In a mixing bowl, combine 2 cups plain yogurt, 1/4 cup honey, 1 teaspoon vanilla extract, and 1 tablespoon lemon juice. Stir until well blended.

  2. 2

In a blender, add 1 cup strawberries and 1 cup blueberries. Blend until smooth, leaving some small berry pieces for texture if desired.

  3. 3

Pour half of the yogurt mixture into popsicle molds, filling each mold about halfway.

  4. 4

Add a layer of the blended berry mixture on top of the yogurt layer, filling each mold to about three-quarters full.

  5. 5

Top off each mold with the remaining yogurt mixture, ensuring to leave a little space at the top.

  6. 6

Insert popsicle sticks into the molds and freeze for at least 4 hours or until completely solid.

  7. 7

To remove the popsicles, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.
