  • (2 cups) rolled oats
  • (2 cups) almond milk
  • (1/2 cups) maple syrup
  • (1 teaspoon) vanilla extract
  • (1 teaspoon) baking powder
  • (1/2 teaspoons) salt
  • (1 teaspoon) ground cinnamon
  • (2 cups) mixed berries (strawberries, blueberries, raspberries)
  • (1/4 cups) chopped nuts (optional)
  • (2 tablespoons) coconut oil (melted)

Instructions

    Preheat your oven to 350°F (175 °C).

    In a large mixing bowl, combine 2 cups rolled oats, 2 cups almond milk, 1/2 cup maple syrup, 1 teaspoon vanilla extract, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon. Stir until well combined. Add 2/4 teaspoon salt.

    Gently fold in 2 cups mixed berries and 1/4 cup chopped nuts (if using) into the oat mixture.

    Pour the mixture into a greased 9x9 inch baking dish, spreading it evenly.
