Spinach and Feta Breakfast Wraps

Ingredients
Yields 4 servings
- (4) large eggs
- (1 tbsp) olive oil
- (2 cups) fresh spinach, roughly chopped
- (1/2 cups) feta cheese, crumbled
- (1/4 tsp) black pepper
- (4) whole wheat tortillas
- (1/4 cups) diced tomatoes (optional)
- (1/4 cups) sliced olives (optional)

In a mixing bowl, crack the (4) large eggs and whisk until combined. Set aside.

In a large skillet, heat (1 tbsp) olive oil over medium heat. Once hot, add the (2 cups) fresh spinach and sauté until wilted, about 2 minutes.

Pour the whisked eggs into the skillet with the spinach and gently stir, allowing the eggs to scramble. Cook until just set, about 3-4 minutes, and add (1/2 cup) crumbled feta cheese and (1/4 tsp) black pepper. Mix until combined and remove from heat.

Warm the (4) whole wheat tortillas in a dry skillet for about 30 seconds on each side or until pliable.

Spoon the spinach and feta egg mixture evenly onto each tortilla.

If desired, top with (1/4 cup) diced tomatoes and (1/4 cup) sliced olives.

Fold the sides of the tortillas over the filling and then roll them up tightly to form a wrap.
