Spinach and Feta Breakfast Skillet

Ingredients
Yields 4 servings
- (2 tablespoons) olive oil
- (1) medium onion, diced
- (2 cloves) garlic, minced
- (8 cups) fresh spinach, roughly chopped
- (1/2 teaspoons) salt
- (1/4 teaspoons) black pepper
- (1/4 teaspoons) red pepper flakes
- (4) large eggs
- (1 cup) feta cheese, crumbled
- (1/4 cups) fresh parsley, chopped (for garnish)

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add 1 medium diced onion and sauté for about 5 minutes until translucent.

Stir in 2 cloves of minced garlic and cook for an additional 1 minute until fragrant. Add 2/4 teaspoon salt.

Add 8 cups of chopped fresh spinach to the skillet, along with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon red pepper flakes. Cook until the spinach is wilted, about 3-4 minutes.

Create 4 small wells in the spinach mixture and crack 1 large egg into each well.

Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.

Sprinkle 1 cup of crumbled feta cheese over the top and cover again for 1-2 minutes until the cheese is warmed through.
