  • (4) medium potatoes, diced
  • (2 tablespoons) olive oil
  • (1) small onion, diced
  • (2 cloves) garlic, minced
  • (4 cups) fresh spinach, chopped
  • (1 teaspoon) salt
  • (1/2 teaspoons) black pepper
  • (1/2 teaspoons) paprika
  • (1/2 cups) feta cheese, crumbled
  • (4) large eggs

Instructions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Add 4 medium diced potatoes to the skillet and cook for about 15-20 minutes, stirring occasionally, until they are golden brown and tender.

    Add 1 small diced onion and 2 cloves of minced garlic to the skillet, cooking for an additional 5 minutes until the onion is translucent.

    Stir in 4 cups of chopped fresh spinach, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of paprika, cooking until the spinach is wilted, about 3-4 minutes. Add 1 teaspoon salt, 2/4 teaspoon black pepper, and 2/4 teaspoon paprika.

    Reduce the heat to low and sprinkle 1/2 cup of crumbled feta cheese over the hash, allowing it to warm through for 2 minutes.
