Spicy Honey Garlic Salmon with Veggies

- (1/4 cups) honey
- (3 tbsp) soy sauce
- (2 cloves) garlic, minced
- (1 tsp) red pepper flakes
- (2 tbsp) olive oil
- (1) bell pepper, sliced
- (1) zucchini, sliced
- (1 cup) broccoli florets
- (1/2 tsp) black pepper
- (1/2 tsp) salt
- (1 tbsp) lemon juice

Preheat the oven to 400°F (200 °C).

In a mixing bowl, whisk together (1/4 cup) honey, (3 tbsp) soy sauce, (2) cloves garlic, minced, and (1) tsp red pepper flakes to create the honey garlic sauce.

Place the (4) salmon fillets on a lined baking tray. Brush half of the honey garlic sauce over the salmon.

In another bowl, combine (2 tbsp) olive oil, (1) bell pepper, sliced, (1) zucchini, sliced, (1 cup) broccoli florets, (1 /2) tsp black pepper, and (1 /2) tsp salt. Toss to coat the veggies evenly with the oil and seasoning.

Spread the seasoned vegetables around the salmon on the baking tray.

Roast in the preheated oven for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Remove the tray from the oven, then drizzle the remaining honey garlic sauce over the salmon.

Return to the oven and broil on high for an additional 2-3 minutes to caramelize the sauce.
