Spicy Honey Garlic Chicken Stir-Fry

Ingredients
Yields 4 servings
- (1 lb) boneless chicken thighs, cut into bite-sized pieces
- (3 tbsp) honey
- (3 tbsp) soy sauce
- (2 tbsp) rice vinegar
- (2 tbsp) vegetable oil
- (1) bell pepper, sliced
- (1) onion, sliced
- (2 cloves) garlic, minced
- (1 tsp) fresh ginger, minced
- (1 -2) red chili peppers, sliced (adjust for spice)
- (2 cups) broccoli florets
- (1/4 cups) green onions, chopped
- (1 tbsp) sesame seeds, for garnish

In a small bowl, mix together (3 tbsp) honey, (3 tbsp) soy sauce, and (2 tbsp) rice vinegar to prepare the sauce.

In a large skillet, heat (2 tbsp) vegetable oil over medium-high heat.

Add the (1 lb) chicken thighs to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the (1) sliced bell pepper, (1) sliced onion, (2 cloves) minced garlic, (1 tsp) minced ginger, and (1 -2) sliced red chili peppers. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Return the cooked chicken to the skillet and pour the sauce over the mixture. Stir well to combine and cook for an additional 2-3 minutes until everything is heated through and coated in the sauce.

Add (2 cups) broccoli florets to the skillet and stir-fry for another 2-3 minutes until the broccoli is tender yet still crunchy.

Remove from heat and top with (1/4 cup) chopped green onions and (1 tbsp) sesame seeds before serving.
