Spicy Harissa Chicken Wraps

- (2) boneless, skinless chicken breasts
- (2 tbsp) harissa paste
- (1 tbsp) olive oil
- (1) medium red bell pepper, sliced
- (1) medium cucumber, sliced
- (1/2) red onion, thinly sliced
- (4) whole wheat tortillas
- (1/2 cups) plain Greek yogurt
- (1 tbsp) lemon juice
- (1/4 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) fresh cilantro, chopped

In a bowl, combine (2 tbsp) harissa paste, (1 tbsp) olive oil, (1/4 tsp) salt, and (1/4 tsp) black pepper.

Add the (2) boneless, skinless chicken breasts to the bowl, making sure they are fully coated with the marinade. Let it marinate for at least 30 minutes.

While the chicken is marinating, prepare the sauce by mixing (1/2 cup) plain Greek yogurt and (1 tbsp) lemon juice in a small bowl. Set aside.

Preheat a grill or a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked through and no longer pink inside. Remove from heat and let rest for 5 minutes.

Slice the cooked chicken into strips.

To assemble the wraps, lay out each of the (4) whole wheat tortillas. Spread a generous amount of the yogurt sauce over each tortilla.

Top with sliced red bell pepper, cucumber, red onion, and the sliced chicken. Sprinkle (1/4 cup) fresh cilantro over the top of the fillings.

Wrap the tortillas tightly around the fillings, slice in half if desired, and serve immediately.
