Ingredients
Yields 4 servings
- (4) boneless, skinless chicken breasts
- (2 tbsp) olive oil
- (2 tbsp) lime juice
- (1) jalapeño pepper, finely chopped
- (1 tsp) chili powder
- (1 tsp) garlic powder
- (1/2 tsp) cumin
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (4) large flour tortillas
- (1) avocado, diced
- (1) medium tomato, diced
- (1/2) red onion, finely chopped
- (1/4 cups) fresh cilantro, chopped
- (1) lime, cut into wedges
Instructions
- 1
In a bowl, mix (2 tbsp) olive oil, (2 tbsp) lime juice, (1) finely chopped jalapeño pepper, (1 tsp) chili powder, (1 tsp) garlic powder, (1/2 tsp) cumin, (1/2 tsp) salt, and (1/4 tsp) black pepper together.
- 2
Add the (4) chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.
- 3
Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
- 4
While the chicken is grilling, prepare the avocado salsa by combining (1) diced avocado, (1) diced tomato, (1 /4) finely chopped red onion, and (1/4 cup) chopped fresh cilantro in a bowl. Squeeze juice from (1) lime over the mixture and gently toss to combine. Season with salt if desired.
- 5
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken into strips.
- 6
To assemble the wraps, place a portion of the sliced chicken on each of the (4) tortillas, top with a generous scoop of the avocado salsa, and wrap tightly.
- 7
Serve the wraps with lime wedges on the side for extra flavor.
