Instructions
- 1
Cook 2 cups of white rice according to package instructions and set aside.
- 2
In a bowl, combine 1 tablespoon chipotle chili powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon cumin, 1 teaspoon salt, and 1/2 teaspoon black pepper to create a spice mix.
- 3
Cut 1 lb of chicken breast into bite-sized pieces and toss with the spice mix until evenly coated.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and no longer pink.

Add 1 can of black beans and 1 cup of corn to the skillet with the chicken. Stir and cook for an additional 3-4 minutes until heated through.
- 6
To assemble the bowls, divide the cooked rice among 4 bowls. Top each bowl with the spicy chicken mixture, 1/4 cup shredded cheese, 1/4 cup cherry tomatoes, and diced avocado.
- 7
Garnish each bowl with fresh cilantro and serve with lime wedges on the side.
