Spicy Chipotle Chicken Burrito Bowl with fresh toppings

  • (2 cups) cooked white rice
  • (1 lb) chicken breast
  • (2 tablespoons) olive oil
  • (1 tablespoon) chipotle chili powder
  • (1 teaspoon) garlic powder
  • (1 teaspoon) onion powder
  • (1 teaspoon) cumin
  • (1 teaspoon) salt
  • (1/2 teaspoons) black pepper
  • (1 can) (15 oz) black beans, drained and rinsed
  • (1 cup) corn, frozen or canned
  • (1 cup) cherry tomatoes, halved
  • (1) avocado, diced
  • (1/2 cups) shredded cheese (cheddar or Mexican blend)
  • (1/4 cups) fresh cilantro, chopped
  • (1) lime, cut into wedges

Instructions

    Cook 2 cups of white rice according to package instructions and set aside.

    In a bowl, combine 1 tablespoon chipotle chili powder, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon cumin, 1 teaspoon salt, and 1/2 teaspoon black pepper to create a spice mix.

    Cut 1 lb of chicken breast into bite-sized pieces and toss with the spice mix until evenly coated.

    Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and no longer pink.

    Add 1 can of black beans and 1 cup of corn to the skillet with the chicken. Stir and cook for an additional 3-4 minutes until heated through.
