Spicy Chickpea Salad Sandwich

Ingredients

- (1 can / 15 oz) chickpeas, drained and rinsed
- (1/4 cups) plain Greek yogurt
- (1 tbsp) olive oil
- (1 tbsp) lemon juice
- (1 tbsp) sriracha sauce
- (1 tsp) cumin
- (1/4 tsp) paprika
- (1/4 tsp) salt
- (1/4 tsp) black pepper
- (1/4 cups) red onion, diced
- (1/4 cups) bell pepper, diced
- (1/4 cups) celery, diced
- (1/4 cups) fresh parsley, chopped
- (4 slices) of whole grain bread

In a medium bowl, mash the (1 can) chickpeas with a fork until coarsely broken but still chunky.

Add (1/4 cup) Greek yogurt, (1 tbsp) olive oil, (1 tbsp) lemon juice, and (1 tbsp) sriracha sauce to the mashed chickpeas. Mix well.

Sprinkle in (1 tsp) cumin, (1/4 tsp) paprika, (1/4 tsp) salt, and (1/4 tsp) black pepper. Stir to combine thoroughly.

Fold in (1/4 cup) diced red onion, (1/4 cup) diced bell pepper, (1/4 cup) diced celery, and (1/4 cup) chopped parsley until evenly distributed.

Taste and adjust seasoning as desired, adding more sriracha for extra heat if preferred.

Toast (4) slices of whole grain bread until golden brown.

Spread the spicy chickpea salad generously over (2) slices of bread and top with the remaining slices to form sandwiches.
