Yields 4 servings

  • (1 lb) ground beef
  • (1) medium onion, chopped
  • (2 cloves) garlic, minced
  • (1) bell pepper, chopped
  • (1 can) (15 oz) kidney beans, drained and rinsed
  • (1 can) (15 oz) black beans, drained and rinsed
  • (1 can) (28 oz) crushed tomatoes
  • (2 tbsp) chili powder
  • (1 tsp) cumin
  • (1 tsp) paprika
  • (1/2 tsp) cayenne pepper
  • (1 tsp) salt
  • (1/2 tsp) black pepper
  • (1 cup) beef broth
  • (1 tbsp) olive oil

Instructions

  1. 1

In a large pot, heat 1 tbsp olive oil over medium heat.

  2. 2

Add 1 medium onion, chopped, and 2 cloves garlic, minced. Sauté until the onion is translucent, about 5 minutes.

  3. 3

Add 1 lb ground beef to the pot. Cook until browned, breaking it apart with a spoon, about 7-10 minutes.

  4. 4

Stir in 1 bell pepper, chopped, and cook for an additional 5 minutes.

  5. 5

Add 2 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp cayenne pepper, 1 tsp salt, and 1/2 tsp black pepper. Stir to combine and cook for 1 minute to toast the spices.

  6. 6

Pour in 1 can (28 oz) crushed tomatoes and 1 cup beef broth. Stir well to combine.

  7. 7

Add 1 can (15 oz) kidney beans and 1 can (15 oz) black beans to the pot. Mix everything together.

  8. 8

Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.

  9. 9

Taste and adjust seasoning if necessary before serving.
