Spiced Chai Oatmeal with Fruits and Nuts

Ingredients

- (2 cups) rolled oats
- (4 cups) water
- (1) cinnamon stick
- (1) star anise
- (4) green cardamom pods
- (1) black tea bag
- (1/4 tsp) ground ginger
- (1/2 cups) mixed nuts (such as almonds and walnuts)
- (1) banana, sliced
- (1/2) apple, diced
- (4 tbsp) honey or maple syrup
- (1/2 tsp) vanilla extract
- (1/4 tsp) salt

In a medium pot, bring (4 cups) water to a boil.

Once boiling, add (2 cups) rolled oats, (1) cinnamon stick, (1) star anise, (4) green cardamom pods, and (1/4 tsp) ground ginger.

Reduce the heat to medium-low and stir occasionally. Cook for about 10-15 minutes or until the oats are tender and creamy.

In the last 5 minutes of cooking, add (1) black tea bag and steep for a few minutes, then remove the tea bag.

Stir in (4 tbsp) honey or maple syrup, (1/2 tsp) vanilla extract, and (1/4 tsp) salt to the oatmeal, mixing well.

Remove from heat and let sit for a minute.

Serve the oatmeal in bowls, then top with (1) banana, sliced, (1 /2) apple, diced, and (1/2 cup) mixed nuts.
