- (1 can / 15 oz) chickpeas, drained and rinsed
- (1) medium cucumber, diced
- (1) medium red bell pepper, diced
- (2) green onions, sliced
- (1/4 cups) fresh parsley, chopped
- (1/4 cups) mayonnaise
- (1 tbsp) Dijon mustard
- (1 tbsp) lemon juice
- (1/2 tsp) garlic powder
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (4 slices) of whole grain bread

In a large mixing bowl, add the (1 can / 15 oz) chickpeas and use a fork to smash them until slightly chunky.

Add the (1) medium cucumber, (1) medium red bell pepper, (2) green onions, and (1/4 cup) fresh parsley to the smashed chickpeas.

In a small bowl, mix together (1/4 cup) mayonnaise, (1 tbsp) Dijon mustard, (1 tbsp) lemon juice, (1/2 tsp) garlic powder, (1/2 tsp) salt, and (1/4 tsp) black pepper until smooth.

Pour the dressing over the chickpea and vegetable mixture and stir until everything is well combined.

Toast the (4) slices of whole grain bread if desired, then spoon the chickpea salad onto two slices.
