Smash Burgers

Ingredients
Yields 4 servings
- (1 lb) ground beef (4)
- (4) hamburger buns
- (4 slices) cheddar cheese
- (1/2 cups) mayonnaise
- (1/4 cups) ketchup
- (1/4 cups) yellow mustard
- (1) medium onion, thinly sliced
- (1) medium tomato, sliced
- (1 cup) lettuce leaves
- Salt, to taste
- Pepper, to taste
- (2 tablespoons) vegetable oil

Preheat a large skillet or griddle over medium-high heat for about 5 minutes.

While the skillet is heating, form the ground beef into 4 equal balls, about 4 ounces each. Do not overwork the meat.

Once the skillet is hot, add 2 tablespoons of vegetable oil and swirl to coat the surface. Add Salt, to taste.

Place 2 beef balls in the skillet, spacing them apart. Using a spatula, press down firmly on each ball to flatten them into patties, about 1/2 inch thick.

Season the patties with salt and pepper to taste. Cook for about 3 minutes until a crust forms on the bottom.

Flip the patties and immediately place a slice of cheddar cheese on each. Cook for an additional 2 minutes until the cheese is melted and the burgers are cooked to your desired doneness.

While the burgers are cooking, toast the hamburger buns in the skillet for about 1 minute until golden brown.

Assemble the burgers by spreading 1 tablespoon of mayonnaise on the bottom half of each bun. Top with a lettuce leaf, a burger patty with melted cheese, a slice of tomato, and some onion slices. Drizzle ketchup and mustard on top, then place the top half of the bun on each burger.
