Slow Cooker Pork Carnitas

Ingredients
Yields 4 servings
- (2 pounds) pork shoulder
- (1 tablespoon) olive oil
- (1 teaspoon) salt
- (1 teaspoon) black pepper
- (1 tablespoon) ground cumin
- (1 tablespoon) chili powder
- (1 teaspoon) smoked paprika
- (1) onion, chopped
- (4 cloves) garlic, minced
- (1) orange, juiced
- (1) lime, juiced
- (1) bay leaf

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Season 2 pounds of pork shoulder with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 tablespoon of ground cumin, 1 tablespoon of chili powder, and 1 teaspoon of smoked paprika.

Sear the pork shoulder in the skillet for about 5 minutes on each side until browned.

Place the chopped onion and minced garlic in the slow cooker.

Add the browned pork shoulder on top of the onion and garlic in the slow cooker.

Pour the juice of 1 orange and 1 lime over the pork shoulder.

Add 1 bay leaf to the slow cooker.

Cover and cook on low for 6-8 hours or on high for 4-5 hours until the pork is tender and easily shredded.

Once cooked, remove the pork from the slow cooker and shred it with two forks.
