Slow Cooker Chicken Tacos

- (1 lb) boneless, skinless chicken breasts
- (1 packet) taco seasoning (about 1 oz)
- (1 cup) chicken broth
- (1) medium onion, chopped
- (2 cloves) garlic, minced
- (1 can) diced tomatoes with green chilies (14 2/4 oz)
- (8) small corn tortillas
- (1 cup) shredded lettuce
- (1 cup) diced tomatoes
- (1/2 cups) shredded cheese (cheddar or Mexican blend)
- (1/4 cups) sour cream
- (1) avocado, sliced
- Fresh cilantro for garnish

Place 1 lb boneless, skinless chicken breasts in the slow cooker.

Sprinkle 1 packet taco seasoning over the chicken.

Add 1 cup chicken broth, 1 medium onion (chopped), 2 cloves garlic (minced), and 1 can diced tomatoes with green chilies (drained) to the slow cooker.

Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shredded.

Once cooked, shred the chicken using two forks and stir it back into the juices in the slow cooker.

Warm 8 small corn tortillas in a skillet or microwave.

Assemble tacos by placing shredded chicken on each tortilla, then top with 1 cup shredded lettuce, 1 cup diced tomatoes, 1/2 cup shredded cheese, and 1/4 cup sour cream.
