Servings4

Yields 4 servings

  • (4) medium potatoes, peeled and diced
  • (1 cup) diced ham
  • (1) medium onion, chopped
  • (2 cloves) garlic, minced
  • (4 cups) chicken broth
  • (1 cup) shredded cheddar cheese
  • (1 cup) heavy cream
  • (1 teaspoon) dried thyme
  • (1 teaspoon) salt
  • (1/2 teaspoons) black pepper
  • (1/4 teaspoons) paprika
  • (2 tablespoons) chopped fresh parsley (for garnish)

Instructions

  1. 1

In the slow cooker, combine 4 medium potatoes (peeled and diced), 1 cup diced ham, 1 medium onion (chopped), and 2 cloves garlic (minced). Add 2/4 teaspoon black pepper.

  2. 2

Pour in 4 cups chicken broth and stir to combine all ingredients.

  3. 3

Add 1 teaspoon dried thyme, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/4 teaspoon paprika. Stir well.

  4. 4

Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.

  5. 5

Once cooked, use a potato masher to mash some of the potatoes to thicken the soup, leaving some chunks for texture.

  6. 6

Stir in 1 cup shredded cheddar cheese and 1 cup heavy cream until the cheese is melted and the soup is creamy.

  7. 7

Taste and adjust seasoning if needed. Serve hot, garnished with 2 tablespoons chopped fresh parsley.
