- (2) boneless, skinless chicken breasts
- (1) red bell pepper
- (1) green bell pepper
- (1) yellow onion
- (2 tbsp) olive oil
- (2 tsp) chili powder
- (1 tsp) cumin
- (1 tsp) garlic powder
- (1/2 tsp) salt
- (1/4 tsp) black pepper
- (2 cups) cooked rice
- (1) avocado
- (1) lime
- (1/4 cups) chopped cilantro

Slice the (2) boneless, skinless chicken breasts into thin strips.

In a large bowl, combine the chicken strips with (2 tbsp) olive oil, (2 tsp) chili powder, (1 tsp) cumin, (1 tsp) garlic powder, (1/2 tsp) salt, and (1/4 tsp) black pepper. Mix well and let marinate for 20 minutes.

While the chicken is marinating, slice the (1) red bell pepper, (1) green bell pepper, and (1) yellow onion into thin strips.

Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and browned.

Remove the chicken from the skillet and add the sliced bell peppers and onion. Sauté for about 5 minutes until they are tender yet still crisp.

In serving bowls, layer (1 cup) cooked rice, followed by the chicken and veggies mixture. Top each bowl with slices of (1) avocado and sprinkle with (1/4 cup) chopped cilantro.
