Shrimp Scampi

Ingredients
Yields 4 servings
- (12 oz) linguine pasta
- (1 lb) large shrimp, peeled and deveined
- (1/4 cups) unsalted butter
- (1/4 cups) olive oil
- (4 cloves) garlic, minced
- (1/2 tsp) red pepper flakes
- (1/2 cups) dry white wine
- (1/4 cups) fresh lemon juice
- (1/4 cups) fresh parsley, chopped
- Salt to taste
- Black pepper to taste

Bring a large pot of salted water to a boil. Add 12 oz linguine pasta and cook according to package instructions until al dente. Drain and set aside.

In a large skillet, heat 1/4 cup unsalted butter and 1/4 cup olive oil over medium heat until melted.

Add 4 cloves minced garlic and 1/2 tsp red pepper flakes to the skillet. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

Add 1 lb large shrimp to the skillet. Cook for 2-3 minutes until the shrimp turn pink and opaque, stirring occasionally.

Pour in 1/2 cup dry white wine and 1/4 cup fresh lemon juice. Simmer for about 3-4 minutes until the sauce reduces slightly.

Add the cooked linguine pasta to the skillet and toss to combine with the shrimp and sauce. Season with salt and black pepper to taste.

Remove from heat and stir in 1/4 cup fresh parsley. Serve immediately.
