Shrimp Paella

Ingredients

- (1 lb) shrimp, peeled and deveined
- (2 cups) short-grain rice
- (4 cups) chicken broth
- (1) medium onion, diced
- (1) red bell pepper, diced
- (1) green bell pepper, diced
- (4 cloves) garlic, minced
- (1 tsp) smoked paprika
- (1/2 tsp) saffron threads
- (1/2 cups) frozen peas
- (1/4 cups) olive oil
- Salt to taste
- Black pepper to taste
- Lemon wedges for serving
- Fresh parsley, chopped for garnish

In a large skillet or paella pan, heat 1/4 cup olive oil over medium heat.

Add 1 medium onion, diced, and sauté until translucent, about 5 minutes.

Stir in 1 red bell pepper and 1 green bell pepper, both diced, and cook for another 5 minutes.

Add 4 cloves garlic, minced, and cook for 1 minute until fragrant.

Sprinkle in 1 tsp smoked paprika and 1/2 tsp saffron threads, stirring to combine.

Pour in 2 cups short-grain rice and stir to coat the rice with the oil and spices for about 2 minutes.

Add 4 cups chicken broth and season with salt and black pepper to taste. Bring to a boil.

Reduce heat to low and simmer uncovered for about 15 minutes, stirring occasionally.

After 15 minutes, add 1 lb shrimp, peeled and deveined, and 1/2 cup frozen peas. Stir gently to combine.
