Shrimp Fried Rice

Ingredients
Yields 4 servings
- (2 cups) cooked jasmine rice
- (1 lb) shrimp, peeled and deveined
- (1 cup) frozen peas and carrots
- (3) green onions, sliced
- (2 eggs) , beaten
- (3 tablespoons) soy sauce
- (2 tablespoons) vegetable oil
- (1 teaspoon) sesame oil
- (2 cloves) garlic, minced
- (1/2 teaspoons) black pepper
- (1/4 teaspoons) salt

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.

Add 1 lb shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove shrimp from skillet and set aside.

In the same skillet, add 2 cloves minced garlic and cook for 30 seconds until fragrant.

Add 1 cup frozen peas and carrots and cook for 2-3 minutes until heated through.

Push the vegetables to one side of the skillet and pour 2 beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the vegetables. Add 2/4 teaspoon black pepper.

Add 2 cups cooked jasmine rice to the skillet, along with 3 tablespoons soy sauce, 1 teaspoon sesame oil, 1/2 teaspoon black pepper, and 1/4 teaspoon salt. Stir well to combine all ingredients.

Return the cooked shrimp to the skillet and add 3 sliced green onions. Stir everything together and cook for an additional 2-3 minutes until heated through.
